A friend sent us this and it was excellent - inexpensive, easy and goes a long way. Adding some additional veggies on the side would have been nice had we had some. We finally got to the grocery store last night, so that has been remedied.
White Beans w/Tomato, Parmesan and Basil
(Serve over small pasta or white rice)
Olive oil
3 cloves garlic, minced
1 can cannellini beans (14-15 oz.)
1 can diced tomatoes (drain a bit -- don't remove all of the juice)
1/4 cup minced basil or parsley
1/2 cup grated Parmesan cheese
1 tbsp. lemon juice
* In a large nonstick skillet, heat olive oil (1-2 tbsp) over low heat, add garlic & stir. Cook until lightly colored (a few minutes).
* Stir in the tomatoes, beans, basil or parsley and cook for about 7 minutes -- until well heated through.
* Stir in the cheese and lemon juice. Mix well and remove from heat and let stand for about 3-4 minutes, so flavors meld.
* Serve over small pasta (ditalini, tubetini, very small shells) or white rice.
