WW Classic Deviled Eggs
Jul. 26th, 2006 07:46 amSince people keep asking, here's the recipe I made for the baby shower a few weeks ago. Its from the most recent WW cookbook, "New Complete Cookbook" (the binder one).
Makes 4 servings (I had to scale up a lot). Each egg half is worth 1 point.
4 hard-cooked eggs, peeled and halved lengthwise
2 tsp reduced-calorie mayo
1 tsp ketchup
1 tsp dijon mustard
1/4 tsp cayenne
1/8 tsp salt
Remove yolks from egg halves and set whites aside. In a medium bowl mash egg yolks with fork; mix in other ingredients.
Put filling into egg whites - I used a pastry bag with a star tip. You can sprinkle with paprika or parley for color, but I left them as is, the cayenne gives the mixture a nice color as it is.
